This hot mead cocktail is a liquid and alcoholic version of Raffaello. It tastes like white chocolate, coconut, and almonds with a touch of honey alcohol. This beverage is for everyone who does not enjoy drinking overly sweet beverages. If you want to make a festive cocktail that looks just like a winter fairytale, follow along.
- 20g white chocolate
- 8 cl coconut milk
- 4 cl almond milk
- 6 cl of dry mead. I used the one from Pirker
- one can of full-fat coconut cream (400ml, but you will not use all)
It is very easy to make it! Let us show you how its done!
Whipped coconut cream
This hot cocktail will be topped with whipped coconut cream, therefore we recommend putting the can of coconut cream in the fridge the day before making the cocktail. This will separate the full-fat coconut milk from the coconut water. To make the cream, gently scoop the hardened coconut cream (which is now in the top of the can) into a prechilled mixing bowl. Use a mixer and mix for approx. 2 minutes or until it becomes fluffy. Store in the refrigerator.
Hot mead cocktail
Firstly, melt the white chocolate over a water bath. When it is completely melted, add the coconut milk. Gently stir until the chocolate is fully dissolved. Then add the almond milk and gently stir again.
When you feel that the liquid is hot and fully incorporated, pour in the dry mead. Stir for 10 seconds and make sure it does not start boiling. Serve right away.
Top it with coconut cream, which will melt and create a nice, creamy layer when in contact with the hot cocktail. You can also add some ground almonds and Raffaello balls if you please.
