There is no better week to try out a new, healthy pumpkin dessert than on Halloween!
If you want to serve a glass of something special this year, you may want to consider mead! Why mead? Well, the combination of pumpkin and mead is hard to beat!
These raw dessert balls, made of nuts, raisins, and pumpkin seeds are topped with orange-juice infused mascarpone and homemade pumpkin paste. We are using only wholefood ingredients. These balls are not only delicious, but they could be enjoyed as snacks aka energy balls as well. Let’s dive in:
Ingredients for 15 pieces:
- 200g of walnuts
- 250g of raisins
- 50g of pumpkin seeds
- 5 teaspoons of unsweetened cocoa powder
- 2 teaspoons of pumpkin seed oil
- 150g mascarpone
- 3 tablespoons of freshly squeezed orange juice
- 500g of pumpkin (could be butternut squash, muscat squash, …)
- 20g butter
- 3 drops of vanilla extract
- 2 tablespoons of flower honey
- 1/3 teaspoon of cinnamon
- orange peel from 1/2 of orange
- A glass of sweet Mead, we used Vcelovina Special
Usually, raw desserts require much less preparation time as the baked ones. This one is made in just a few steps and it does not compensate for the taste, nor the nutritional value. Well, what are we waiting for, lets roll up the sleeves and lets roll up some delicious dessert balls.
Firstly, make sure to soak the raisins in cold water for at least 15 minutes. Peel and cut the pumpkin into bigger chunks and steam it for 20 minutes or until soft. Drain the raisins and add them to a high-speed blender together with walnuts, pumpkin seeds, pumpkin oil, and cocoa.
Take this sticky mixture out of the mixer and start formating small balls with your hands. Roll each ball in a nut mixture, we used crushed pumpkin seeds and walnuts. Place them on a baking tray and refrigerate.
Our pumpkin should be soft like butter by now. You can set it aside and let it cool a bit. Use this time to grade the orange for orange peel, then squeeze some orange juice as well. Mix (by hand) the mascarpone with 3 spoons of orange juice and set aside.
Place the pumpkin chunks into a blender together with butter, vanilla, cinnamon, orange peel, and honey. Blend until smooth. Place it into the fridge for 10 minutes to cool off completely.
Let’s bring this dessert together by using a decorating bag. Fill one bag with mascarpone and the other with pumpkin paste. By doing small circles, make the mascarpone layer first and the pumpkin one on top. You can sprinkle some caramel sugar on top and we even made little dots of reduced orange juice to elevate the presentation of the dessert.
