The queen of summer mead desserts; a fusion of peaches, cream, honey wine and cookies in a glass.
What do these layers consist of?
The key ingredient that makes these peaches taste incredibly creamy and sweet is honey wine. The result is well balanced; sweet, fresh, crunchy and creamy all at once. The bottom is made of crumbled cookies. The middle layer consists of peach slices cooked in sweet mead by @lymebaywinery. The peaches are topped with a mead & peach puree infused whipped cream.
Guidelines to help you recreate this dessert:
The dessert is very much foolproof as nothing can fall apart if you adapt the quantities based on your taste, so have fun experimenting in the kitchen. However, having ripe peaches and tasty honey wine is crucial.
Ingredients for 4 portions:
- 200g of butter cookies/other cookies/leftover biscuit
- 3 dl of sweet honey wine. I used the one from @lymebaywinery
- 1,5 kg of fresh peaches
- 400g of whipping cream
- 1/2 a lemon
- 3 Tablespoons of gelling/jam sugar
- fresh basil for decoration
Simply follow these steps …
Step 1: Blanch the peaches in boiling water, so that you can easily remove the skin. Cut 1 kg of peaches into a centimeter wide slices. Cut the remaining half a kilogram into cubes. Pouring the juice of half a lemon over the fruit will keep its bright orange color.
Step 2: Melt the jam sugar in a pan over low heat. When light brown, add the peach cubes and 1 dl of honey wine, stir gently. Cook for one hour on low heat. When the peaches are completely soft, use a blender to get a smooth, puree-like consistency. If you don’t have a blender, you can also strain it through a fine-mesh sieve. Refrigerate for an hour.
Step 3: Add 2 dl of sweet mead to a saucepan and cook over medium heat until reduced by half (3min). Add the peach slices and cook for another 5 minutes, so they soften. Cool down in the fridge for at least an hour.
Step 4: Crush the cookies and whisk the whipping cream. Slowly stir the puree into the whipped cream. Do not overmix! Fill the cream into a piping bag. Layer everything as shown in the photo and serve with a basil leaf and a glass of chilled sweet mead.
No matter the craving, these three layers combined tick all the boxes. Enjoy this light dessert on hot summer days!
